This Weeks Menu Plan + Freezer Cooking

 

 

Am I the only one having trouble believing that Thanksgiving is next week?!   And our freezer is as empty as I have ever seen it so, needless to say, I am going to have to kick it into high gear to get some shopping and cooking done for the freezer this week.   

 

Since things are crazy busy right now, I do not have an entire day (or even half a day!) to devote specifically to freezer cooking, I plan on doing a quadrouple batch of a meal every night this week and seeing what I end up with at the end of the week.  It may take 2 weeks to fill our freezer because not only do we need meals for us to eat the next month, we also need some Thanksgiving and Christmas goodies too!  ;)

 

Here is what I have in mind for this week:

 

Monday – Hamburger Steaks with Sauted Onions + Salad

Make Hamburger Patties in meal size portions for the freezer

Tuesday -  Spaghetti with Garlic Bread

5 meals worth of Spaghetti for the freezer

Wednesday – Taco Salad

4 meals worth of Taco meat for the freezer

Thursday - Slow Cooker Chicken

Mexican Chicken + Slow Cooker Chicken Meals for the Freezer

Friday - Out

Saturday - Homemade Pizza

4 Pizza Dough Packets  + 4 meals worth of Soup for the freezer

Sunday - Soup and maybe some sweet cornbread.  Mmm mmm!!  ;)

 

This will be my first try at freezer cooking in small breakout sessions rather than all at one time so I’m excited to see how it goes!  

 

 

 

 

September Freezer Cooking

 

 

Before we moved my husband and I ate of our freezer for almost 6 weeks straight in order to minimize the amount of food we would have to move across state.   Now that we are moved and settled into our new place, it was time for another round of freezer cooking in order to restock our freezer with meals for the next month or so.

 

We spent less than four hour together in the kitchen this past Saturday afternoon and whipped up almost 40 meals that should last us well through September and maybe some of October as well.   Now we can rest easy and simply pop in our healthy, homemade meals for the next month rather than driving through the drive thru on our crazy, hectic nights.

 

Here is a tally of what accomplished this weekend:

  • Hamburger patties x 8
  • Spaghetti x 6
  • Chili  x 5
  • Marinated Chicken x 12
  • Pizza Dough x 8

 

While we didn’t cook a wide variety of meals this time, we will alternate with sandwiches, left overs, salads and I have a few roasts in the freezer that we can use in order to mix things up over the next month.   All in all, we made a ton of wholesome meals in order to tide us over for the next month or more!  :)

 

Freezer Cooking Wrap Up

 

I am completely done with my freezer cooking!!     I didn’t make everything on my list and I made a few things that weren’t on my list to begin with.  I always try to stay open and just go with the flow of how things are going while I am in the kitchen.

 

We have over 30 meals in the freezer ready to go whenever we need them in the coming month.    It was a lot easier this time since I made marinades for the chicken then stuck in the chicken in a baggie and put it all back in the freezer.   It will have time to marinade when it’s thawing.   These will be great kids for days I want to just throw something into the slower cooker and forget it.    I love it because our kitchen gets SO hot in the summer.   I don’t have to worry about that anymore!  ;)

  • BBQ Chicken x 1 (decided to see how BBQ sauce freezes before making a huge batch!)

  • Apple filling for an Apple Pie

July Freezer Cooking

 

I am going to be spending a few hours in the kitchen everyday this week in order to re-stock our freezer.   I haven’t cooked since late March or early April so I am ready to fill our freezer to the brim once again.    I am hoping to try a few new things this time around both for our home and our trip to Colorado that is coming up so quickly!

 

I will most likely give a run down every day, but I thought I would go ahead and share my plan with you!

 

  • Lasagna x 3
  • Spaghetti x 6
  • Taco Meat x 6
  • Hamburger Patties x 4
  • Peppered Steak x 2
  • BBQ Chicken x 4
  • Chicken Marinade x 8
  • Oven Baked Shredded Chicken x 4
  • Shredded Taco Seasoned Chicken x 4
  • Pizza Kits x 4
  • Chocolate Chip Cookie Dough x 2
  • Chocolate Chip Butterhorns

 

This is a rather large undertaking considering my schedule this week, but I’m hopeful that I will be able to accomplish as least most of it since I plan to tackle a little bit everyday!  :)

January Once a Month Cooking ~ Final Results!

I wrapped up my cooking marathon this morning around 11ish and I am so pleased with the results.  I don’t think I could have put another thing in our freezer – it. is. packed!

Here is our final results:

  • Spaghetti x 4
  • Tacos x 3 (I still have 2 meals worth in the freezer from my last cooking day)
  • Chili x 6
  • Lasagna x 3
  • Chicken Tortilla Soup x 4 (the recipe made LOTS of soup!)
  • Chicken Pot Pie x 4
  • Chicken Fajitas x 4
  • Pesto Chicken for Pizza x 2
  • Whole Wheat Pizza Dough (major fail.  searching for new recipe)
  • Whole Wheat Pie Crust (we’ll see how this is tonight with chicken pot pie!)

My husband helped cut up the chicken for me last night – all 18 pounds of it.   I hate cutting up uncooked chicken so he agreed that would be his part of our cooking session.  :)

It was a lot easier for me, since I was cooking by myself, to break my cooking up into 2 days.  I finished by 1 p.m. yesterday and by Noon this afternoon – that includes my prep, cooking, and clean up times.  Not too shabby for all of those meals!   We have over 30 meals in our freezer ready whenever need to grab ‘em.   :)
